We are big ice cream fans. For years we have had a tradition of buying a couple of boxes of ice cream (usually the chocolatiest/nuttiest kind I could find--especially love "Bear Tracks") for Sunday dinner dessert. However, for "health reasons" (i.e. the battle of bulge) as well as for economic reasons I've been cutting way back since retirement. However, last night after Linda and I finished streaming the first episode of Season 3 of Downton Abbey (I know, we're hopelessly behind but we have been BUSY since I retired and we almost never watch TV) she mentioned she had a craving for chocolate ice cream. Unfortunately none in the house. I did a web search and found several recipes for quick and healthy chocolate ice cream. I was missing ingredients for some, and others didn't look very good. I conflated several recipes and added some twists of my own. The result was delicious, inexpensive, and nutricious. A rich creamy thick chocolate ice cream with no added sugar that was ready in about 5 minutes. Here's how:
Put the following into a good blender and pulse until smooth:
- 2 frozen bananas (over-ripe if possible)
- 1/2 cup dates
- 1 tsp vanilla extract
- 3/4 cup milk (or some milk substitute)
- 4 Tbsp peanut butter
- 1 cup rolled oats
- 2 pinches of salt
- 3 Tbsp cocoa
- 1/4 cup chocolate chips
Try topping it with some raw nuts. MMM!
