Please don't let the fact that these Chocolate Macadamia Clusters are vegan, heart-healthy, have no sugar, and are gluten-free stop you from indulging. They are good for you but they are also decadently delicious! Especially if you're a dark chocolate fan. They remind me of a cross between dark fudge, triple-chocolate cookies, and truffles. Very unique and wonderfully delicious! In addition they are so fast and easy to make that you can whip up a fresh batch (no baking required) in 5 minutes.
How to make Healthy Chocolate Macadamia Clusters:
- 1/4 cup Rolled Oats
- 1/2 cup Peanut Butter
- 1/3 cup Dates (You don't have dates? Get some! They're nature's candy. Oh fine, you can use Raisins if you prefer)
- 2 Tbsp Chocolate Chips - Semi Sweet
- 2 Tbsp Cocoa Powder
- 1/4 cup Shredded Coconut
- 1/4 tsp Salt
- 3 Tbsp Cashews - raw (can substitute for other nuts or even dry roasted peanuts)
- 1/8 tsp vanilla extract
- Macadamia Nuts
Put the rolled oats into a food processor and pulverize to a flour consistency. Add the ingredients except the macadamia nuts and blend until smooth. Microwave 6 macadamia nuts at a time for 30 seconds to "roast". Roll the dough into balls around each of the macadamia nuts and top with chocolate chips.
Oh boy...they're GOOD! They are rich but have two...they're good for you and there are no guilty pangs in the aftertaste.
