Super Bowl Salsa - Yummy Healthy Beautiful and Easy



Though mostly ignored by much of the rest of the world American Football is the most popular sport in the USA, and the biggest football sporting event is the Super Bowl.  The athletes are in top condition but too many of the 179 Million fans are not.  According to the Christian Science Monitor Super Bowl Sunday is the second biggest "food holiday" (behind Thanksgiving).  Much of the food consumed will taste great (i.e. deep-fried, super-salty, oil drenched, sugar-filled, artery-clogging deliciousness) but will make people even sicker and fatter than before.

Here's a healthy alternative.  Don't let the fact that this is a vegan favorite make you think it's bland or too weird for the "big" fans.  This stuff is all fresh, beautifully colorful, absolutely delicious, and is actually good for your heart (maybe it can help counteract the 1.2 Billion fried chicken wings that will be consumed during the game).

It's also simple to make...here's how:

  • 1 can (15 ounce) of sweet corn drained (or a 1 lb. bag of frozen)
  • 3 Roma tomatoes
  • 1/2 of an onion
  • 1 Sweet pepper (any color)
  • 1 Lime juiced
  • 1 Avocado ripe
  • 1 Handful fresh cilantro minced
  • Salt
Dice everything up, add to the corn, salt it to taste.  For an extra kick chop up and add one Jalapeno pepper.  Enjoy!

  1. I'd add fresh cilantro! And I think this kind of salsa, like most things, tastes better with kosher salt than table salt. Why is it that kosher salt makes things so much yummier?

    1. Good catch Diana! I actually did have cilantro in it (see the ingredients photo at the top) but forgot to put it in the post. It's added to the post now. I like the kosher salt suggestion. I'll use that next time. Thanks for the feedback and suggestions!

    2. Have you ever tried Real Salt? It's mined in Utah and is unrefined so it contains all the minerals ... Real Salt makes EVERYTHING better.
      Can't wait til this summer to try this recipe, fresh from our gardens.
