Smokey Roasted Garlic Sauce


Garlic is so good and good for you (e.g. reduced high blood pressure, hardening of the arteries, cancer, tick bites, fungal infections of the skin etc.) that I've been working it into every recipe possible for years including the roasted variety.  You may also have noticed lately that I've been experimenting with smoked paprika and including it in several new recipes.   It is a Spanish paprika called Pimentón de la Vera and it has a distinct piquant smokey flavor and aroma because it is dried by smoking, typically using oak wood.  Paprika is nutritious...paprika peppers have 6 times the vitamin C of tomatoes.  The high vitamin C content helps you absorb iron-rich foods and may help your body fight common infections.  Finally, I make so much kefir that I end up with a lot of kefir cheese which is low-fat and filled with beneficial biota.

This sauce incorporates all three into a scrumptious topping for meats and eggs or as a delicious and healthy dip.

Here is how to make Smokey Roasted Garlic Sauce:

  • 1/2 tsp Smoked Paprika
  • 2 bulbs Roasted Garlic
  • 2/3 cup Kefir Cheese - can substitute yogurt cheese, or sour cream (will increase calories and fat) 
  • 3 Tbsp Fresh Cilantro - chopped
  • 1 Tbs Maple Syrup
  • Salt & Pepper to taste
Squeeze out the roasted garlic and mash with a fork.  Combine kefir cheese with roasted garlic, maple syrup, paprika, cilantro, and a sprinkle of salt and pepper.  Mix together until well blended.

Spread on roasted chicken, use as a dip for chips, or combine with scrambled eggs.
